  • 1.5 oz ginger beer, lemon and lime
  • 4 oz of champagne
  • A few drops of lime juice
  • A splash of limoncello

Ingredients

  • 1 cup of coconut milk
  • ½ cup of unflavored gelatin
  • 1 cup of orange or tangerine puree (or any seasonal fruit you love)
  • 1 cup of honey or maple syrup, or 50-60 drops of liquid stevia
  • 8-10 yogurt capsules or 1 spoon of yogurt starter
  • 1 tablespoon of vanilla extract
  • Food coloring
  • Blueberry juice
  • Salt

For starters, boil up the milk, the honey and the pinch of salt in a pot. Gradually sprinkle the gelatin over the hot mixture until it dissolves completely. Remove from the heat and let it cool until it reaches between 105 and 110 ºF. This step is very important because if the mixture is too hot, it can kill the probiotics. When it has reached this temperature, add the fruit puree, the vanilla extract, the yogurt and the food coloring. Remember, you can use any flavor of fruit puree.

Pour the mixture out into candy molds, or any other mold you have, and freeze it for 30 minutes or until it’s solid. Take the candy out of the molds and keep them in the fridge. You will have a delicious cold treat without feeling guilty, because you will be eating one the healthiest recipes with fruit ever.

Ingredients

  • 1⅓ cups of raw cashew nuts (soaked for 4-6 hours and rinsed)
  • ⅓ cup of virgin coconut oil
  • 2 teaspoons of lime juice   
  • ¾ of vanilla yogurt*
  • ⅓ cup of honey
  • Pinch of salt
For the puree fruit layer
  • 3 cups of passion fruit puree
  • ¾ of a teaspoon of gelatin
  • ¼ of honey

In a blender, process the nuts, the oil, the lime juice, the yogurt, the honey and the salt until you get a smooth texture. Then, divide the mixture into two parts. Use the first half to create a layer in glasses and put them in the fridge to chill. Leave the rest at room temperature.

Next, you will have to heat the passion fruit puree and sprinkle in the gelatin. Wait for 2 to 3 minutes until it boils, and the gelatin is completely dissolved. Finally, add some honey, stir and let it chill until it is thick enough.

Now, it’s time to assemble it. This process can take a while, since you’ll have to wait every time you add a layer, but it will be totally worth it. First, add a layer of passion fruit puree in each glass and take it back to the fridge to chill. When firm, add a layer of the cheesecake mixture. Once again, put it back into the fridge and let it set. Finish with some lemon zest and you’re ready to enjoy one of the most delicious recipes with fruit for a hot summer.

*For a vegan twist, you can replace the honey with agave and the yogurt with non-dairy.

Ingredients

  • 64 oz of strawberry puree
  • 14-16 oz of pie crust dough (you can make it from scratch or just buy it at the supermarket)
  • 2 teaspoons of milk and cream
  • 1 egg
  • Icing sugar

Preheat the oven to 400 ºF.

First, divide the pie crust dough into balls, like the size of golf balls. Make sure they are all the same size so they can cook evenly. Afterward, roll out the dough into 6-inch circles. For the filling, put 3 tablespoons of the strawberry puree in the middle of each circle.

Now it’s folding time. You’ll have to fold the dough but not all the way. Leave about 1 inch to make the double fold later. Seal the filling by using your fingertips to press down. If you want the dough to stick better, use egg on the edge of the seal. 

Finally, fold the overlap and using your forefinger and your thumb to start pinching the dough all the way until the filling is completely sealed and the crust is crimped together. Before baking, brush with a mixture of egg and milk and sprinkle with sugar. Don’t forget to make small cuts on top for venting. Bake for 25 minutes in the oven or until golden brown.

Recipes with fruit and a vegan twist

This is a twist on one of the most traditional recipes with fruit: the Victoria sponge cake. It is filled with the same richness, but there are a couple of differences making it egg-, and dairy-free. So, welcome in the fall season with this warm and light sponge.

H3: Vegan Victoria sponge cake

Ingredients

  • 1 vanilla pod
  • 150 g dairy-free spread
  • 300 ml oat milk (or any other dairy-free milk)
  • 300 g of self-rising flour
  • 200 g of caster sugar (preferably golden)
  • 1 teaspoon of cider vinegar
  • 1 teaspoon of baking soda
For the filling
  • 100 g of dairy-free spread
  • 200 g of icing sugar
  • 4 teaspoons of cherry fruit puree or any fruit puree you love

Preheat the oven to 356ºF and line the bases of two sandwich tins with parchment. Use dairy-free spread to grease them.

Mix the milk with the vinegar and leave for a few minutes until the texture becomes lumpy. Then, mix half of the vanilla beans with the rest of the cake ingredients and add to the milk and vinegar mixture. Mix until smooth.

Now, for the baking, divide the mixture into the two tins and bake them for 20 to 30 minutes. To check if they are done, insert a knife in the middle and if it comes out clear, it’s ready to go. Take the cakes out of the oven and let them cool. In the meantime, make the buttercream by mixing the dairy-free spread, the icing and the rest of the vanilla seeds until smooth.

When the cakes are cool and your filling is ready, spread a layer of the fruit pure over one of the sponges and then one layer of the buttercream. Put the other sponge on top and sprinkle icing sugar over the top layer.

Pay a lot of attention to the texture of the mixture. If the mixture is too soft, then it’s not a good idea to use an electric beater because you can overwork it. On the contrary, if the mixture is too firm, use an electric beater to make it lighter.
